1. To make the guacamole, it all happens on the board. Roughly chop the cherry tomatoes and finely chop the chilli (deseed if you like). Finely chop the coriander leaves, including the top part of the stalks.
2. Halve and remove avocado stone, then squeeze each half onto the board so the flesh comes out of the skin.
3. Squeeze over the lime juice and chop everything together until fine. Season with sea salt flakes and cracked pepper.
4. Taste and adjust the flavours if needed. Serve in a bowl
